Slow Cooker Onion Soup

Top the soup with a toasted piece of your favorite bread. This recipe was a winner in our Simply Slow Cookin' contest. Congratulations to Rene Loiselle, Respiratory Services, UMass Memorial - HealthAlliance Hospital, Leominster, MA (Serves 8)

Ingredients

  • 3 lbs. onions, sliced
  • 2 T butter
  • 2 T olive oil
  • Salt and pepper
  • 8 c. beef broth
  • 2 T balsamic vinegar

Directions

Place sliced onions, olive oil, butter, a bit of salt and a healthy amount of black pepper into the slow cooker and cook on low for 8 hours or overnight. Add beef broth and balsamic vinegar and cook on low an additional 4 to 6 hours.
