Green Mango Salad
(Serves 4)
Ingredients
- 2 firm green mangos, peeled and julienned
- 1 cucumber, peeled and julienned
- 1 small daikon, peeled and julienned
- 2 shallots, thinly sliced
- 1/4 c. cherry tomatoes, quartered
- 1 c. shrimp, cooked and roughly chopped
- 1 lime, juiced
- 3 T fish sauce
- 1 clove of garlic
- 2 Thai chilis, sliced
- Cilantro
- Thai basil
- Mint
- Chopped peanuts
Directions
Combine mangos, cucumber, daikon, shallots, tomatoes and shrimp into a large salad bowl. In a separate bowl, combine lime juice and fish sauce. Add garlic and chilis to bowl and crush in the sauce. Add finely chopped cilantro, Thai basil and mint to the salad bowl. Pour the sauce over the prepped ingredients in the salad bowl. Mix vigorously and sprinkle chopped peanuts onto the salad when served.
